Summer garden blackberry pizza. I got most of the fruits and veggies from my garden and I picked the blackberries from nature. This blackberry balsamic pizza sauce is full of flavor and adds something new to your pizza night. Makes 2-3 pizzas. Ingredients: For the Pizza Dough: 3.5 cups all purpose flour 1 tsp salt 1 tsp sugar 1 cup water 2 tbsp olive oil For the Blackberry Sauce: 1 cup blackberries 1/2 cup water 1/4 cup balsamic vinegar 1 tbsp lemon juice 2.5 tbsp maple syrup 1/2 tsp Dijon mustard 1/2 tsp ground black pepper 1/4 tsp garlic powder 3 dates soaked For the Cashew Cheese 1 cup cashews soaked overnight 1 cup hot water 3 tbsp tapioca flour 1/2 tsp salt 2 tsp lemon juice 1/2 tsp garlic powder 1-2 tbsp nutritional yeast (optional) Toppings: 1 yellow squash 5-6 fresh figs 6-8 asparagus stems handful of baby broccoli fresh blackberries fresh basil, spinach, rosemary dried Italian herbs Directions: 1. To make the dough, combine flour, salt, and sugar in a bowl. Add water and olive oil and knead the dough. Cover and place the dough in a warm place for 2 hours. 1. To make the blackberry sauce, add all of the sauce ingredients into a blender. Blend until smooth. 2. To make the cashew cheese, add all of the cheese ingredients into a food processor. Process until smooth. Pour the mixture into a saucepan and heat at medium heat for 10 minutes while stirring continuously. Let cool for a few minutes. Fill a bowl with ice water and 1/2 tsp of salt. Scoop out spoonfuls of the cashew cheese and place into the water. Take out and form them into balls, then smash each ball slightly. Set aside. 4. Divide the dough into 2 or 3 portions, then roll into a ball then roll out flat on a floured surface. Place the crusts onto greased baking sheets. Spread the blackberry sauce onto the pizza crust and cover with sliced squash. Bake in the oven at 350 deg F for 15 minutes. 5. Take out the pizzas and place the remaining toppings onto the pizza. Place the pizzas back in the oven and cook for another 15-18 minutes or until the crusts become golden. Drizzle on the remaining blackberry sauce and enjoy while warm. #BestofVeganPizza
